At our previous two potlucks, someone brought a Mexican casserole. If anyone knows who it was, please have them post the recipe on this site. It was delicious!!!

Actually there were several other dishes that were very good. Hopefully we can get the recipes posted on this blog.

  • I went to the second potluck, and brought my No Crust Quinoa Quiche. Here’s one version of the recipe if anyone wants it. It’s not too difficult to change around and create new recipes with this, too!

    No Crust Quinoa Quiche
    Preheat oven to 375 degrees. Grease an 8×8 cooking dish (or spray with olive oil etc)

    • ½ cup rinsed quinoa
    • 5 eggs
    • 1 ½ cup cubed ham
    • ¼ tsp pepper
    • 1/14 cup cheddar cheese, shredded
    • 1 cup milk
    • 2 tsp sharp prepared mustard
    • ½ tsp basil
    • Cheese to add on top

    Rinse quinoa. Mix eggs, milk, spices and quinoa in a bowl. Put veggies, meat, and/or cheese in dish. Ladle egg/quinoa mix on top. Cover dish with tinfoil. Jiggle dish to settle quinoa. Bake 40 or so minutes (until just set); then remove foil from dish and add any additional toppings, like cheese or sliced almonds. Bake 15 or so more minutes.
